First Boil of 2022

President's weekend is usually a good time to boil. Having collected over 80 gallons of sap, and running it through the reverse osmosis (RO) process, I picked Monday to boil since there was some questionable weather for the other days. Mike was ready to go at 8:00 AM, and Carol provided some bagels to fuel us as we fueled the fire, and in no time we had all pans boiling. Mike is now a pro, so I put him in charge of his six-hour shift.
Markus always knows when the time is right to boil, and his timing was even more perfect when he came by at beer o'clock to lend a hand. Sam and Brandon were first-time visitors, wisely coming near the end of the process to witness the final consolidation along with the long shadows of the afternoon.
The yield was nearly two gallons that I will finish and bottle another day. Coco and I were tuckered out from a long day in the beautiful outdoors.
