Season on Ice

Last year at this time we were working on the second boil of the season. This year the freezing temperatures are not cooperating. A bit of sap running last week provided less than 30 gallons of sap. It takes 40 gallons of sap to make one gallon of syrup, along with a whole day outside. The 30 gallons of sap I do have is frozen solid, and there is no good chance of it thawing for the weekend.
The good news is that the cold will keep the sap fresh, and combined with any new sap, provide an ample supply. So far the weather doesn’t look much better for next week either, but we’ll see. Spring is bound to come sooner or later!
